Lobenberg: 87% Xarel-lo und 13% Macabeu und einer Einzellagen des Weinguts „Serral del Vell“. Die Reben wachsen auf einem kalkhaltigen Hochplateau – perfekt, um die kargen Grundweine für Cava zu erzeugen. Bei Recaredo hat Nachhaltigkeit einen hohen Stellenwert: Der Weinbau ist komplett biodynamisch, und auch beim Degorgieren wird Energie gespart, indem die Hefe in flüssiger Form entfernt wird, anstatt den Flaschenhals einzufrieren. Die Nase ist geprägt von Croissant, Birne und grüner Mandel. Er erinnert mehr an Champagner als andere Cavas. Total geradlinig und dennoch hocharomatisch. Am Gaumen zeigt er sich zart cremig und strukturiert, mit frischer Quitte und zartem Eukalyptus. Dazu kommt Salz und helles Gestein. Sehr expressiv und erhaben. Es kommt eine total zurückhaltende und subtile Bitterkeit durch. Nicht störend sondern charakterbildend. Der Abgang ist angenehm lang und komplex. Mir persönlich gefällt dieser Ausdruck noch ein wenig besser als der des Terres. Er ist ein wenig karger, mineralischer und straffer.

-- Parker: I tasted again the 2018 Serral del Vell, but this time with one more year in bottle with lees. It was produced with a blend of 85% Xarel.lo and 15% Macabeo from the vineyard that names the wine, 41 hectares from which they selected the grapes from two plots of Xarel.lo planted in 1996 and 1997 and two plots of Macabeo planted in 1989. It has gained in complexity and nuance, and it's elegant, with an ethereal quality and fine reduction provided by the extended élevage in bottle. It's vibrant and tasty, with an electric palate, 11.5% alcohol, a pH of 3.06 and 5.1 grams of acidity. It was disgorged in November 2024. 2018 was a rainy year with good yields and freshness. 63,000 bottles produced.

-- Galloni: The 2018 Brut Nature Serral del Vell is composed of 85% Xarel·lo and 15% Macabeu from short limestone soils. It was aged for 72 months and disgorged in March 2025. The bouquet is marked by pronounced autolysis, featuring yeast, intense pastry, baked bread and toast, with a subtle note reminiscent of mango peel. Lean and vibrant with fine, crunchy bubbles, it closes on crème brûlée. Flavorful, chalky and concentrated on the palate, it stands out for its depth and precision.

-- Weingut: Single-estate character. Grapes harvested from Recaredo’s Serral del Vell Estate, which stands on a small plateau (serral) carved out of the Bitlles Valley Highlands on a mainly calcareous terrain. Biodynamic viticulture, a step beyond organic farming. We let plant cover grow spontaneously between the vines. This cover plays a crucial role in loosening the soil, regulating water retention and drainage, and helping to foster biodiversity. Infusions of plants are applied to the vines to control the presence of fungus in the vineyard and strengthen the vine's defences. Hand-harvested grapes. Harvesting is done completely by hand to maintain the properties of the grapes used for a long-aged wine. In-house vinification. Vinification, winemaking and ageing are carried out entirely in Recaredo. Secondary fermentation with organic must, a leading commitment that brings us closer to the philosophy of making terroir wines linked to the most sincere identity of our wine region. Long-aged with natural cork stopper, a sustainable, recyclable and ideal material for retaining the original character of a long-aged sparkling wine. Manual disgorging without freezing. Disgorging (the uncorking process) is done by hand without freezing the neck of the bottle, a technique based on skilled craftsmanship and respect for the environment. Sobriety and elegance.
