-- Parker: Made with 80% Assyrtiko and 20% Aidani, the Hatzidakis 2013 Santorini Vinsanto (in a 375-milliliter bottle) opens to a dark mahogany or chestnut color. Harvested fruit is laid to rest on nets under the sun and dried like raisins. Fermentation occurs slowly with wild yeasts over three months, and the wine is matured in barrel for nine years. The alcohol content is a moderate 9.5%. You get aromas of burnt sugar, allspice, dried fig, shaved chocolate and plum cake. The effect is heady and rich, and the wine is pretty much indestructible.
